Curried Creamed Spinach and Garbanzos
Creamed spinach with the additional goodness of curry and heartiness of garbanzos.
or other high heat vegetable oil
yellow curry paste
or 1 tsp favorite curry powder
drained and rinsed
cut into sections (optional)
Heat oil over medium high heat. Add onions, stir occasionally until they start to get tender, about 2 minutes.
Add curry paste and stir continuously until onions are coated with paste and curry becomes fragrant.
Add coconut milk, spinach and garbanzos. Stir occasionally, breaking up the frozen spinach. Bring to a boil, then reduce heat and simmer for 10 minutes.
Serve over brown rice, as a side dish, or in a lettuce wrap adding garnishes if desired.
If you like more heat, add some crushed chili flakes or cayenne pepper when you add the curry paste.
