When you need some comfort food for both your stomach and your soul, you can’t go wrong with curry.  Curry is warm and comforting.  Not only does it taste good, but it has healing aromatic properties.  Hours after you’ve eaten your meal, it will still be soothing you with its lingering fragrance.

Adding spinach and garbanzos to the mix will leave you feeling satisfied and refreshed.  Ah!  But the coconut milk…  that is where the sweet creaminess comes from!  The creaminess that just keeps calling you back for one more bite.

Instructions
  1. Heat oil over medium high heat. Add onions, stir occasionally until they start to get tender, about 2 minutes.
  2. Add curry paste and stir continuously until onions are coated with paste and curry becomes fragrant.
  3. Add coconut milk, spinach and garbanzos. Stir occasionally, breaking up the frozen spinach. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Serve over brown rice, as a side dish, or in a lettuce wrap adding garnishes if desired.
Recipe Notes

If you like more heat, add some crushed chili flakes or cayenne pepper when you add the curry paste.
